Description

A delicious and refreshing BLT chicken salad made with rotisserie chicken, crispy bacon, creamy avocado, and fresh veggies, perfect for a light meal.


Ingredients

  • 4 cups rotisserie chicken (shredded)
  • 8 strips bacon (chopped, center cut)
  • 1/2 cup plain Greek yogurt (or skip and use all mayonnaise)
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 1/2 tsp freshly cracked pepper
  • 1/3 cup green onions (diced)
  • 2/3 pint grape tomatoes (halved or quartered)
  • 1 avocado (diced)


Instructions

  1. In a large mixing bowl, combine mayonnaise and Greek yogurt for the dressing. Whisk in ranch seasoning and pepper until well combined.
  2. Add shredded chicken, chopped bacon, and diced green onions to the bowl and mix until fully incorporated.
  3. Gently fold in halved grape tomatoes to maintain their shape.
  4. Taste and adjust seasonings if necessary.
  5. Right before serving, gently toss in diced avocado.
  6. Chill in the refrigerator for at least one hour before serving.

Notes

For a lighter option, substitute half of the mayonnaise with Greek yogurt. Consider experimenting with different seasonings or add-ins.
