A delicious and refreshing BLT chicken salad made with rotisserie chicken, crispy bacon, creamy avocado, and fresh veggies, perfect for a light meal.
Ingredients
- 4 cups rotisserie chicken (shredded)
- 8 strips bacon (chopped, center cut)
- 1/2 cup plain Greek yogurt (or skip and use all mayonnaise)
- 1/3 cup mayonnaise
- 1 tablespoon ranch seasoning
- 1/2 tsp freshly cracked pepper
- 1/3 cup green onions (diced)
- 2/3 pint grape tomatoes (halved or quartered)
- 1 avocado (diced)
Instructions
- In a large mixing bowl, combine mayonnaise and Greek yogurt for the dressing. Whisk in ranch seasoning and pepper until well combined.
- Add shredded chicken, chopped bacon, and diced green onions to the bowl and mix until fully incorporated.
- Gently fold in halved grape tomatoes to maintain their shape.
- Taste and adjust seasonings if necessary.
- Right before serving, gently toss in diced avocado.
- Chill in the refrigerator for at least one hour before serving.
Notes
For a lighter option, substitute half of the mayonnaise with Greek yogurt. Consider experimenting with different seasonings or add-ins.
