A refreshing twist on the classic BLT, this chicken salad combines shredded rotisserie chicken, crunchy bacon, creamy dressing, and fresh vegetables.
Ingredients
- 4 cups rotisserie chicken, shredded
- 8 strips bacon, chopped (center cut)
- 1/2 cup plain Greek yogurt (or substitute with mayonnaise)
- 1/3 cup mayonnaise
- 1 tablespoon ranch seasoning
- 1/2 teaspoon freshly cracked pepper
- 1/3 cup green onions, diced
- 2/3 pint grape tomatoes, halved or quartered
- 1 avocado, diced
Instructions
- In a large mixing bowl, combine the mayonnaise and Greek yogurt, whisking them together.
- Add the ranch seasoning and freshly cracked pepper; whisk until smooth.
- Fold in the shredded rotisserie chicken, chopped bacon, and diced green onions, mixing thoroughly.
- Gently incorporate the halved grape tomatoes into the mixture.
- Taste and adjust the seasonings as needed.
- Just before serving, add the diced avocado, gently tossing it into the salad or layering it on top.
Notes
Store any leftovers in an airtight container for up to three days. Keep avocado separate until serving to maintain freshness.
