Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 tablespoons vegetable oil (30 g)
- 1/2 medium onion chopped
- 2 cloves garlic minced
- 1 cup uncooked orzo pasta (200 g)
- 5 cups vegetable broth (600 ml)
- 1 (5.2 oz (147 g)) package cream cheese softened
- 2 cups (packed) fresh baby spinach (60 g)
- 2 cups (480 ml) cooked beef chopped/shredded
- Salt & pepper to taste
- Fresh chives chopped (optional, to taste)
Instructions
- Heat the olive oil and vegetable oil in a pot over medium-high heat, then add the chopped onion. Cook the onion for 3-4 minutes until it starts to soften.
- Incorporate the minced garlic and orzo pasta into the pot. Stir frequently and cook for 2-3 minutes to enhance the orzo’s flavor and lightly toast it.
- Add the vegetable broth to the mixture. When it begins to simmer, cook for 10 minutes without covering, stirring regularly. Adjust the heat to medium or medium-low to maintain a gentle simmer, ensuring the liquid doesn’t evaporate too quickly. If needed, add more broth to prevent the pasta from drying out.
- Mix in the softened cream cheese until the mixture is smooth.
- Remove the pot from the heat, then add the fresh baby spinach and cooked beef. Cover the pot and let it rest for 5 minutes so the spinach wilts, the beef warms, and the sauce thickens slightly.
- Season with salt and pepper according to your preference, and garnish with chopped chives if you like before serving.
