Description

A rich and creamy Brazilian Coconut Chicken dish that’s simple to make and bursting with flavor, perfect for cozy dinners or impressing guests.

Ingredients

  • 1.5 lbs chicken pieces
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tomato, diced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the chicken pieces and brown on all sides.
  4. Stir in the green bell pepper and tomato, cooking for a few more minutes.
  5. Pour in the coconut milk, and season with salt and black pepper.
  6. Reduce heat and let simmer for about 30 minutes, or until the chicken is cooked through.
  7. Garnish with fresh cilantro before serving. Enjoy with rice or bread!

Notes

For best results, avoid boiling the coconut milk to maintain its silky texture and consider adding herbs like cilantro at the end for freshness.
