Ingredients
- 1.5 lbs chicken pieces
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 tomato, diced
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the chicken pieces and brown on all sides.
- Stir in the green bell pepper and tomato, cooking for a few more minutes.
- Pour in the coconut milk, and season with salt and black pepper.
