A comforting and creamy soup made with fresh broccoli, cauliflower, and sharp cheddar cheese, perfect for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- Salt and pepper (to taste)
- 3 tablespoons all-purpose flour
- 4 cups water
- 4 teaspoons chicken base
- 3 cups fresh broccoli florets
- 3 cups fresh cauliflower florets
- 1 cup half and half
- 2 cups shredded sharp cheddar cheese
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced carrots, celery, and onions. Season with salt and pepper, and sauté until softened, about 5 minutes.
- Stir in the flour and cook for an additional minute.
- Combine 4 cups of water with the chicken base, and add this mixture to the pot along with the broccoli and cauliflower.
- Bring to a boil, then reduce heat and let simmer until the veggies are tender, about 10 minutes.
- Turn off the heat and mash the veggies to your desired consistency.
- Stir in the half and half and shredded sharp cheddar cheese until melted. Adjust seasoning if needed.
Notes
For extra flavor, consider adding spices like paprika or cayenne. You can blend the soup for a smoother texture or leave some chunks for added bite.
