Description
Deliciously stuffed chicken breasts with a creamy broccoli and cheddar filling, perfect for a family gathering or weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts (large size for stuffing)
- 3 cups broccoli florets (steamed and chopped)
- 1 1/2 cups shredded cheddar cheese
- 2 oz cream cheese (room temperature)
- 1 tablespoon chopped fresh chives (or other fresh herbs)
- Garlic powder, cumin, or other spices, to taste
- 1/4 cup olive oil (divided for cooking)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Steam the broccoli florets by placing them in a microwave-safe bowl with 2 tablespoons of water, covering, and microwaving for 2 minutes. Drain and chop.
- In a bowl, combine chopped broccoli, cheddar cheese, cream cheese, chives, salt, and pepper.
- Using a knife, cut a deep pocket into each chicken breast without cutting all the way through.
- Fill each pocket with the broccoli-cheese mixture, pressing firmly to pack it.
- Season the outer sides of the chicken breasts with garlic powder, salt, pepper, and any additional spices.
- Heat olive oil in an ovenproof skillet over medium heat and sear the chicken for about 3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the internal temperature reaches 165°F (73.9°C).
- Let the chicken rest for a few minutes before serving, then slice and enjoy warm.
Notes
For added flavor, experiment with different spices and cheeses. Use toothpicks to seal pockets if needed.
