Description

Deliciously stuffed chicken breasts with a creamy broccoli and cheddar filling, perfect for a family gathering or weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (large size for stuffing)
  • 3 cups broccoli florets (steamed and chopped)
  • 1 1/2 cups shredded cheddar cheese
  • 2 oz cream cheese (room temperature)
  • 1 tablespoon chopped fresh chives (or other fresh herbs)
  • Garlic powder, cumin, or other spices, to taste
  • 1/4 cup olive oil (divided for cooking)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Steam the broccoli florets by placing them in a microwave-safe bowl with 2 tablespoons of water, covering, and microwaving for 2 minutes. Drain and chop.
  3. In a bowl, combine chopped broccoli, cheddar cheese, cream cheese, chives, salt, and pepper.
  4. Using a knife, cut a deep pocket into each chicken breast without cutting all the way through.
  5. Fill each pocket with the broccoli-cheese mixture, pressing firmly to pack it.
  6. Season the outer sides of the chicken breasts with garlic powder, salt, pepper, and any additional spices.
  7. Heat olive oil in an ovenproof skillet over medium heat and sear the chicken for about 3 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the internal temperature reaches 165°F (73.9°C).
  9. Let the chicken rest for a few minutes before serving, then slice and enjoy warm.

Notes

For added flavor, experiment with different spices and cheeses. Use toothpicks to seal pockets if needed.
