Ingredients
- 1.5 pounds boneless skinless chicken breasts (about 4 large breasts)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 teaspoon garlic powder (divided)
- ½ teaspoon paprika
- 1 tablespoon Italian seasoning
- 1 cup small chopped broccoli florets
- 1 cup shredded cheddar cheese
- ¼ cup cream cheese
Instructions
- Preheat your oven to 375°F.
- Place the chicken breasts on a chopping board and slice through the middle to create a pocket for the stuffing.
- Season the chicken on all sides with salt, pepper, paprika, and Italian seasoning.
- In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, ½ teaspoon of garlic powder, and cream cheese. Season with a pinch of salt and pepper to taste.
- Spoon the mixture into each chicken breast pocket and secure with toothpicks.
- Heat the olive oil in a large, ovenproof skillet over medium-high heat.
- Sear the stuffed chicken for 2-3 minutes on each side until nicely browned.
- Transfer the skillet to the oven and bake for an additional 15-17 minutes, or until a meat thermometer reads 165°F in the middle of the chicken.
Notes
Always allow your chicken to rest before slicing to retain juices. Try different cheese for varied flavors.
