Description

A cozy dinner of broccoli and cheese stuffed chicken breast that transforms a weeknight meal into something special.


Ingredients

  • 1.5 pounds boneless skinless chicken breasts (about 4 large breasts)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (divided)
  • ½ teaspoon paprika
  • 1 tablespoon Italian seasoning
  • 1 cup small chopped broccoli florets
  • 1 cup shredded cheddar cheese
  • ¼ cup cream cheese


Instructions

  1. Preheat your oven to 375°F.
  2. Place the chicken breasts on a chopping board and slice through the middle to create a pocket for the stuffing.
  3. Season the chicken on all sides with salt, pepper, paprika, and Italian seasoning.
  4. In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, ½ teaspoon of garlic powder, and cream cheese. Season with a pinch of salt and pepper to taste.
  5. Spoon the mixture into each chicken breast pocket and secure with toothpicks.
  6. Heat the olive oil in a large, ovenproof skillet over medium-high heat.
  7. Sear the stuffed chicken for 2-3 minutes on each side until nicely browned.
  8. Transfer the skillet to the oven and bake for an additional 15-17 minutes, or until a meat thermometer reads 165°F in the middle of the chicken.

Notes

Always allow your chicken to rest before slicing to retain juices. Try different cheese for varied flavors.
