Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1 cup brown sugar, packed
- 1 cup fresh pineapple chunks (or canned)
- ½ cup soy sauce
- ¼ cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) if baking or heat a skillet over medium-high heat.
- In a bowl, combine the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Mix well to create a flavorful sauce.
- Season the chicken breasts with salt and pepper, coating them evenly.
- If using a skillet, heat the vegetable oil and sear the chicken breasts for 3-4 minutes per side until browned.
- Pour the sauce over the chicken and top with fresh pineapple chunks.
- If baking, transfer the skillet to the oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). If using stovetop, cover and simmer for 15-20 minutes.
- Garnish with chopped fresh cilantro before serving.
Notes
