Description

A delightful dish that combines sweet and savory flavors, featuring tender chicken breasts in a rich brown sugar glaze with fresh pineapple.

Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) if baking or heat a skillet over medium-high heat.
  2. In a bowl, combine the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Mix well to create a flavorful sauce.
  3. Season the chicken breasts with salt and pepper, coating them evenly.
  4. If using a skillet, heat the vegetable oil and sear the chicken breasts for 3-4 minutes per side until browned.
  5. Pour the sauce over the chicken and top with fresh pineapple chunks.
  6. If baking, transfer the skillet to the oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). If using stovetop, cover and simmer for 15-20 minutes.
  7. Garnish with chopped fresh cilantro before serving.

Notes

For enhanced flavor, consider marinating the chicken in the sauce for a few hours or overnight. Serve with white rice or quinoa for a complete meal.
