Description

Bruschetta Chicken Pasta combines grilled chicken, penne pasta, and a vibrant cherry tomato-basil topping for a flavorful and comforting meal.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 12 oz penne pasta
  • 2 cups cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp balsamic glaze
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • Italian seasoning to taste
  • Salt and pepper to taste


Instructions

  1. Season the chicken breast pieces with Italian seasoning, salt, and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes until golden brown. Remove from heat.
  3. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente, about 10-12 minutes. Reserve 1/2 cup pasta water, drain pasta, and return it to the pot.
  4. In a small pan, heat remaining olive oil over medium heat. Sauté minced garlic for 30 seconds, then add cherry tomatoes and cook for 2-3 minutes until slightly softened. Remove from heat and stir in chopped basil.
  5. Toss the drained pasta with a little olive oil, then divide among plates. Top each portion with grilled chicken and spoon the tomato-basil mixture over the chicken. Drizzle with balsamic glaze and sprinkle with Parmesan cheese.
  6. Garnish with fresh basil leaves, extra balsamic glaze, and black pepper. Serve immediately.

Notes

Cut chicken into uniform pieces for even cooking. Reserve pasta water to adjust consistency if needed.
