Ingredients
- 2 Tablespoon (30 ml) s apple cider vinegar
- 1 Tablespoon (15 ml) whole grain mustard
- 2 teaspoon (10 ml) s pure maple syrup
- 1 Tablespoon (15 ml) olive oil
- 1 pound (454 g) brussels sprouts
- 1/4 cup (60 ml) finely grated Parmesan cheese
- Salt and Pepper (to taste)
- 1 apple (thinly sliced (honey crisp, pink lady, or other tart apples))
- 1/4 cup (60 ml) pecans (chopped)
Instructions
- In a medium bowl, combine the apple cider vinegar, whole grain mustard, pure maple syrup, and olive oil. Add salt and pepper to suit your taste preferences.
- Using the stem as a handle, finely slice each Brussels sprout until you reach about a half-inch from the base. Dispose of the stems and transfer the sliced sprouts to a large bowl, gently breaking them apart with your hands and removing any hard pieces.
- Mix the sliced Brussels sprouts with the prepared dressing until they are well coated. Allow them to rest at room temperature for at least 15 minutes to let the sprouts tenderize and the flavors meld.
- Just before serving, incorporate the grated Parmesan cheese, thinly sliced apple, and chopped pecans. Check the seasoning and add more salt and pepper if necessary.
