Description

A vibrant and flavorful dish featuring juicy chicken breasts tossed in tangy Buffalo sauce, served with rice or quinoa and fresh vegetables.


Ingredients

  • 4 Juicy chicken breasts
  • 1/2 cup Buffalo sauce
  • 2 cups rice or quinoa
  • 1 cup bell peppers, chopped
  • 1 cup celery, chopped
  • 1/2 cup blue cheese or ranch dressing
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper, then coat with Buffalo sauce.
  3. Place chicken in a baking dish and bake for 25-30 minutes until cooked through.
  4. Meanwhile, cook rice or quinoa according to package instructions.
  5. Chop bell peppers and celery.
  6. Once the chicken is done, shred it and mix with more Buffalo sauce if desired.
  7. In bowls, layer rice or quinoa, the shredded chicken, chopped vegetables, and drizzle with blue cheese or ranch dressing.
