Description

Learn how to make delicious Buffalo Chicken Stuffed Peppers with this easy recipe! Perfect for a flavorful and satisfying meal.

Ingredients

  • 3 bell peppers any colors you like; I used a mix of red and green
  • 2/3 cup (160 ml) classic hot sauce such as Frank’s Red Hot
  • 1 tablespoon (15 ml) olive oil
  • 1/2 teaspoon (3 ml) kosher salt
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 2 cup (480 ml) s cooked, shredded chicken from about 2 medium breasts; see “Meal Prep Tips” above for additional easy methods for cooking
  • 1/2 cup (120 ml) plain Greek yogurt plus additional for serving
  • 3/4 cup (180 ml) shredded provolone cheese or Mozzarella cheese I used a 50/50 blend, divided
  • 1/2 cup (120 ml) crumbled feta cheese or blue cheese
  • 1/4 cup (60 ml) finely chopped green onions

Instructions

  1. Set your oven to 375 degrees F and lightly grease a 9×13-inch baking dish with a spray that prevents sticking.
  2. Cut the bell peppers in half lengthwise, removing seeds and inner membranes, then place them cut side up in the greased dish.
  3. In a medium pot over medium heat, combine the hot sauce, olive oil, salt, garlic powder, and onion powder, stirring until the olive oil is fully blended. Take off the heat.
  4. Combine the shredded chicken with the sauce, ensuring it is fully coated.
  5. Mix in the Greek yogurt and 1/4 cup of the shredded provolone cheese.
  6. Fill each pepper half with the mixture. Scatter the remaining 1/2 cup of provolone cheese on top.
  7. Add a small amount of water to the baking dish, just enough to cover the bottom thinly. Carefully place it in the oven and bake without a cover for 30 to 35 minutes, until the peppers are tender when pierced with a fork and the cheese is bubbly.
  8. Take the dish out of the oven. Garnish with crumbled feta and chopped green onions. Serve while hot.

Notes

  • For a more subtle taste, adjust the amount of hot sauce used or opt for a milder variety.
  • Save time by using rotisserie chicken instead of cooking and shredding chicken breasts.
  • Experiment with various cheese combinations to create a unique flavor profile.
