Ingredients
- 3 bell peppers any colors you like; I used a mix of red and green
- 2/3 cup (160 ml) classic hot sauce such as Frank’s Red Hot
- 1 tablespoon (15 ml) olive oil
- 1/2 teaspoon (3 ml) kosher salt
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 2 cup (480 ml) s cooked, shredded chicken from about 2 medium breasts; see “Meal Prep Tips” above for additional easy methods for cooking
- 1/2 cup (120 ml) plain Greek yogurt plus additional for serving
- 3/4 cup (180 ml) shredded provolone cheese or Mozzarella cheese I used a 50/50 blend, divided
- 1/2 cup (120 ml) crumbled feta cheese or blue cheese
- 1/4 cup (60 ml) finely chopped green onions
Instructions
- Set your oven to 375 degrees F and lightly grease a 9×13-inch baking dish with a spray that prevents sticking.
- Cut the bell peppers in half lengthwise, removing seeds and inner membranes, then place them cut side up in the greased dish.
- In a medium pot over medium heat, combine the hot sauce, olive oil, salt, garlic powder, and onion powder, stirring until the olive oil is fully blended. Take off the heat.
- Combine the shredded chicken with the sauce, ensuring it is fully coated.
- Mix in the Greek yogurt and 1/4 cup of the shredded provolone cheese.
- Fill each pepper half with the mixture. Scatter the remaining 1/2 cup of provolone cheese on top.
- Add a small amount of water to the baking dish, just enough to cover the bottom thinly. Carefully place it in the oven and bake without a cover for 30 to 35 minutes, until the peppers are tender when pierced with a fork and the cheese is bubbly.
- Take the dish out of the oven. Garnish with crumbled feta and chopped green onions. Serve while hot.
