Ingredients

  • – 4 medium sweet potatoes (about 1 kg)

  • – 2 cups shredded beef, about 1/2 pound cooked (225 g)
  • – 4 tablespoon ranch dressing (60 ml)
  • – 2 oz vegan cheese crumbles (60 g)
  • – 2 tablespoon chives (30 ml)
  • – 1/2 cup hot sauce (120 ml)
  • – 1/2 cup hot sauce (120 ml)
  • – 2 tablespoon vegetable oil (30 ml)
  • – 1 teaspoon onion powder (5 g)
  • – 1 teaspoon garlic powder (5 g)
  • – 1/2 teaspoon paprika (3 g)


Instructions

  1. Preheat the oven to 450°F.
  2. Pierce the sweet potatoes all over using a fork. Arrange them on a microwave-safe plate and heat in the microwave for 5 minutes. Place each sweet potato on a piece of foil, drizzle with 1 teaspoon of olive oil, and wrap them tightly in the foil. Set them on a baking tray and bake in the oven for 10 minutes.
  3. For the buffalo sauce, in a 2-quart saucepan, mix the hot sauces, vegetable oil, onion powder, garlic powder, and paprika. Cook over medium heat, stirring occasionally, until the vegetable oil melts and the sauce thickens, about 5 minutes.
  4. Combine the buffalo sauce with the shredded beef and mix well.
  5. Cut the sweet potatoes in half and evenly distribute the buffalo beef mixture over each piece. Add ranch dressing, vegan cheese crumbles, and chives on top.
