Ingredients
- 1 large sweet potato
- 1 cup cooked chicken, shredded
- 1 cup broccoli, chopped
- 1/2 cup onion, diced
- 4 strips bacon, cooked and crumbled
- 1/2 cup buffalo sauce
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potato, then boil until tender, about 10 minutes.
- In a large bowl, combine the cooked sweet potato, shredded chicken, broccoli, onion, bacon, and buffalo sauce. Mix well to combine.
- Transfer the mixture to a greased casserole dish and spread it evenly.
- If desired, sprinkle cheese on top.
- Bake for 20-25 minutes or until heated through and bubbly.
- Let it cool slightly before serving.
Notes
For added creaminess, mix in a little sour cream or Greek yogurt with the buffalo sauce before combining with other ingredients. Customize with other vegetables like bell peppers or spinach.
