Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 4 cups chicken broth
- 1 cup buttermilk
- 1/4 cup chopped fresh chives
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup butter (cold, cubed)
- 1/2 cup milk
Instructions
- In a large pot, combine chicken thighs and chicken broth. Bring to a boil, then simmer for 30 minutes until chicken is cooked.
- Remove chicken, let cool, and shred into bite-sized pieces.
- In a separate bowl, mix flour, baking powder, salt, and pepper. Cut in butter until coarse crumbs form.
- Stir in buttermilk and chives until just combined.
- Drop spoonfuls of dumpling dough into simmering broth, cover, and cook for 15 minutes until dumplings are puffed.
- Add shredded chicken back to the pot, stir gently, and serve warm.
