Ingredients

  • 4 – 5 cups (480 – 600 g) all-purpose flour
  • 2 tablespoons (30 ml) rapid rise, instant yeast
  • 1/3 cup (65 g) granulated sugar
  • 1 tsp (5 ml) salt
  • 1 1/2 cups (360 ml) warm milk
  • 5 tablespoons (70 g) butter, softened
  • 1 egg, room temperature
  • 2 tablespoons (30 ml) melted butter


Instructions

  1. Place 3 cups of the flour, the yeast, sugar, salt, warm milk, softened butter, and the egg into the bowl of a stand mixer.
  2. Attach the dough hook, set the mixer to its lowest setting, and mix until the flour is combined, scraping down the bowl’s sides as needed.
  3. Turn the speed to medium and continue mixing for 2 minutes.
  4. Add in 1/2 cup of flour and use the dough hook to blend until it’s mixed in. Add another 1/2 cup of flour and repeat, mixing on medium for another 2 minutes until a dough ball forms.
  5. Add more flour if necessary. The dough should be slightly sticky, soft, and starting to pull away from the bowl’s edges.
  6. Move the dough to a lightly oiled bowl and cover with a towel or plastic wrap. Allow it to rise at room temperature for 30 minutes.
  7. Take off the towel or plastic wrap and gently punch down the dough to release air.
  8. Divide the dough into 24 pieces and shape them into rolls. Weigh them for uniformity, aiming for about 2 ounces each, though this can vary with flour quantity.
  9. Place the rolls on a lightly greased quarter baking sheet or in a 9 x 13 baking dish. Cover with a towel or plastic wrap and let them rise again for 30 minutes at room temperature.
  10. Set the oven to 375 degrees Fahrenheit and bake the rolls for 12 to 15 minutes until they are golden brown and fully baked. If they brown too quickly, cover them with foil.
  11. Take the rolls out and brush them while hot with melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.
