Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups green cabbage, chopped
  • 1 cup carrots, shredded or julienned
  • 3 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil


Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5 minutes.
  3. Stir in minced garlic and grated ginger, allowing these to cook for another minute until fragrant.
  4. Add the chopped cabbage and shredded carrots along with soy sauce. Stir-fry everything until the cabbage wilts slightly but remains crunchy—this should take about 3 minutes.
  5. Drizzle honey and sesame oil over the stir-fry, mixing well to combine flavors.
  6. Serve hot on plates or in bowls, optionally garnishing with sesame seeds or green onions.

Notes

Don’t overcrowd your skillet; cook in batches if making a large amount. Adjust soy sauce and seasoning to taste while cooking.
