A delicious Cajun buttermilk chicken burger marinated to perfection, featuring a crispy exterior and juicy, flavor-packed chicken served in a soft brioche bun.


Ingredients

  • 500g chicken thighs
  • 1 cup buttermilk
  • 1 egg
  • Salt to taste
  • 1 tbsp black pepper
  • 1 tbsp Cajun spice
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 cup plain flour
  • 1/4 cup corn flour
  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha
  • 2 tbsp honey
  • Chopped spring onions
  • 1 tbsp chopped gherkins
  • 1/2 cup chopped parsley
  • Brioche buns
  • Lettuce
  • Tomatoes
  • Onions
  • Gherkins


Instructions

  1. Marinate the chicken thighs in buttermilk, egg, and seasonings for at least 1 hour or overnight for maximum flavor.
  2. In a separate bowl, mix the dry batter ingredients: flour, corn flour, black pepper, garlic powder, and paprika.
  3. Dredge the marinated chicken in the dry batter, ensuring each piece is well coated.
  4. Heat oil in a pan and fry the chicken until golden brown and cooked through, usually about 6-8 minutes on each side.
  5. Prepare the Honey Sriracha sauce by mixing mayonnaise, Sriracha, honey, and chopped spring onions in a bowl.
  6. For the burger sauce, combine mayonnaise, Sriracha, chopped gherkins, salt, garlic powder, paprika, and parsley in another bowl.
  7. Toast the brioche buns and assemble by spreading the sauces on the buns. Layer with lettuce, tomatoes, onions, and gherkins.
  8. Top with the fried chicken and serve hot.

Notes

Customize the spice level by adjusting the amount of Cajun seasoning. If using a different type of chicken, like breast, adjust cooking time accordingly.
