Ingredients

  • – 8 ounces (227 g) farfalle pasta
  • – 2 Tablespoons (30 ml) vegetable oil
  • – 3 cloves garlic, minced
  • – 1 pound (454 g) boneless skinless chicken breasts, cut into bite-size pieces
  • – 2 teaspoons (10 ml) Cajun seasoning, more or less, to taste
  • – 4 ounces (113 g) beef cream cheese, softened and cut into small pieces
  • – 1 cup (240 ml) milk
  • – 3/4 cup (85 g) freshly grated Parmesan cheese
  • – 1/2 teaspoon (3 ml) freshly ground black pepper
  • – 1/2 teaspoon (3 ml) salt, more to taste, if needed
  • – Fresh vegetables, if desired, see note*


Instructions

  1. Prepare the pasta by cooking it as per the package directions until it is firm to the bite. Once done, drain and rinse with cold water, then set it aside.
  2. To cook the chicken, heat the vegetable oil in a large pan over medium heat. Add the minced garlic and sauté for half a minute. Add in the chicken pieces (and any chosen vegetables*) and sprinkle with Cajun seasoning. Cook for about 3-4 minutes until the chicken is almost done.
  3. Pour in the milk and add the softened beef cream cheese, stirring continuously until the cream cheese is fully melted and the sauce becomes smooth, which should take about 2-3 minutes.
  4. Mix in the cooked pasta, grated Parmesan cheese, salt, and black pepper. Serve right away.

Notes

  • Consider adding a variety of colorful vegetables such as bell peppers, mushrooms, or cherry tomatoes for enhanced flavor.
  • Adjust the Cajun seasoning to your liking, starting with a small amount and adjusting as needed.
  • For a creamier sauce, use half-and-half or heavy cream instead of milk for a richer taste.
