Ingredients
- – 8 ounces (227 g) farfalle pasta
- – 2 Tablespoons (30 ml) vegetable oil
- – 3 cloves garlic, minced
- – 1 pound (454 g) boneless skinless chicken breasts, cut into bite-size pieces
- – 2 teaspoons (10 ml) Cajun seasoning, more or less, to taste
- – 4 ounces (113 g) beef cream cheese, softened and cut into small pieces
- – 1 cup (240 ml) milk
- – 3/4 cup (85 g) freshly grated Parmesan cheese
- – 1/2 teaspoon (3 ml) freshly ground black pepper
- – 1/2 teaspoon (3 ml) salt, more to taste, if needed
- – Fresh vegetables, if desired, see note*
Instructions
- Prepare the pasta by cooking it as per the package directions until it is firm to the bite. Once done, drain and rinse with cold water, then set it aside.
- To cook the chicken, heat the vegetable oil in a large pan over medium heat. Add the minced garlic and sauté for half a minute. Add in the chicken pieces (and any chosen vegetables*) and sprinkle with Cajun seasoning. Cook for about 3-4 minutes until the chicken is almost done.
- Pour in the milk and add the softened beef cream cheese, stirring continuously until the cream cheese is fully melted and the sauce becomes smooth, which should take about 2-3 minutes.
- Mix in the cooked pasta, grated Parmesan cheese, salt, and black pepper. Serve right away.
Notes
- Consider adding a variety of colorful vegetables such as bell peppers, mushrooms, or cherry tomatoes for enhanced flavor.
- Adjust the Cajun seasoning to your liking, starting with a small amount and adjusting as needed.
- For a creamier sauce, use half-and-half or heavy cream instead of milk for a richer taste.
