A comforting and flavorful one-pot dish featuring Cajun-seasoned chicken, long-grain rice, and the classic ‘Holy Trinity’ of Cajun cooking.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Chopped parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Season the chicken with Cajun seasoning, salt, and pepper.
- Add the chicken to the pot and cook until browned on all sides.
- Remove the chicken and set it aside.
- In the same pot, add the chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Return the chicken to the pot, stirring to combine with the vegetables.
- Add the rice, stirring until well-coated with the spices.
- Pour in the chicken broth, bringing the mixture to a simmer.
- Cover the pot, reducing the heat to low. Cook for about 20-25 minutes or until the rice absorbs the liquid and the chicken is fully cooked.
- Fluff the rice with a fork and garnish with chopped parsley.
Notes
For added flavor, consider marinating the chicken before cooking. You can also substitute shrimp or sausage for a different twist.
