Description

A comforting and flavorful one-pot dish featuring Cajun-seasoned chicken, long-grain rice, and the classic ‘Holy Trinity’ of Cajun cooking.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Chopped parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Season the chicken with Cajun seasoning, salt, and pepper.
  3. Add the chicken to the pot and cook until browned on all sides.
  4. Remove the chicken and set it aside.
  5. In the same pot, add the chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
  6. Stir in the minced garlic and cook for an additional minute.
  7. Return the chicken to the pot, stirring to combine with the vegetables.
  8. Add the rice, stirring until well-coated with the spices.
  9. Pour in the chicken broth, bringing the mixture to a simmer.
  10. Cover the pot, reducing the heat to low. Cook for about 20-25 minutes or until the rice absorbs the liquid and the chicken is fully cooked.
  11. Fluff the rice with a fork and garnish with chopped parsley.

Notes

For added flavor, consider marinating the chicken before cooking. You can also substitute shrimp or sausage for a different twist.
