Ingredients
- – 4 boneless skinless chicken breasts (about 680g)
- – 1 teaspoon olive oil (5 ml)
- – 2 teaspoons cajun seasoning (10g)
- – 2 tablespoons (30 ml) vegetable oil
- – 1 tablespoon honey (15g)
- – 2 mangoes – diced (optional)
- – handful cilantro – chopped
- – 1 tablespoon (15 ml) vegetable oil – as needed
- – 1 celery stalk – thinly sliced
- – 1 bell pepper – diced (I used red)
- – 1 teaspoon (5 ml) minced garlic
- – 1 cup long grain white rice – uncooked (200g)
- – 2 ¼ cups beef broth (530 ml)
- – 1 tablespoon cajun seasoning (5g)
Instructions
- Coat the chicken breasts with olive oil. Sprinkle Cajun seasoning evenly on all sides.
- In a large skillet over medium heat, heat the vegetable oil. When hot, mix in the honey.
- Place the chicken in the skillet and sear for 1-2 minutes on each side. Remove the chicken from the skillet and keep it aside.
- Add the sliced celery, diced bell pepper, and minced garlic to the skillet and sauté for a minute (if the skillet is dry, add an additional tablespoon of vegetable oil).
- Mix in the uncooked rice, Cajun seasoning, and beef broth. Allow it to come to a boil.
- Lower the heat to medium-low, return the chicken to the skillet, arranging it on top of the rice. Cover the skillet and let it cook for 15-20 minutes until the chicken is thoroughly cooked and the rice is soft.
- Use a fork to fluff the rice and serve the chicken and rice with diced mangoes, chopped cilantro, and lime wedges for squeezing on top.
