Ingredients

- – 1 large red onion, diced (about 1 1/2 cups (360 ml))
- – 1 teaspoon (5 ml) garlic, minced
- – 1 1/2 cups (277.5 g) long-grain white rice, uncooked
- – 2 tablespoons (30 ml) Cajun seasoning, divided
- – 3 cups (720 ml) chicken broth
- – 1 pound (454 g) boneless, skinless chicken breasts, cut into 1-inch pieces
- – 2 tablespoons (30 ml) vegetable oil
- – 1 teaspoon (5 ml) garlic, minced
- – 1 teaspoon (5 ml) Cajun seasoning
- – 1 cup (238 g) coconut milk
- – parsley, chopped for garnish
Instructions
- In a large pot with a tight-fitting lid over medium heat, melt half of the butter.
- Add the diced onion. Sauté, stirring occasionally, until it softens (around 3-4 minutes).
- Mix in the minced garlic and cook for an additional minute.
- Add the uncooked rice and one spoon of Cajun seasoning, ensuring the rice is fully coated with the seasoning.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, lower the heat, cover with the lid, and let it simmer for 20-25 minutes without disturbing it, until the rice is soft and the liquid is absorbed. If the liquid persists after 25 minutes, cook for an extra 3-4 minutes while keeping the lid on.
- While the rice is simmering, get the chicken ready. In a medium bowl, toss the chicken pieces with the remaining spoon of Cajun seasoning.
- In a large non-stick skillet over medium-high heat, melt the other half of the butter. Once melted, add the chicken pieces. Cook for 8-10 minutes, turning halfway, until evenly browned and cooked through to 165°F internally. Move the chicken to a plate and cover to keep warm as you prepare the sauce.
- In the same skillet over medium heat, add butter. Once melted, add garlic and sauté for 1 minute. Stir in Cajun seasoning and coconut milk. Cook, stirring occasionally and scraping up any browned bits for 3-5 minutes, until fully heated.
- Combine the sauce and cooked chicken with the pot of rice. Stir everything together.
- Sprinkle with chopped parsley. Serve right away.
