Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces linguine pasta
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper. Let marinate for about 10 minutes.
  2. Cook the linguine in boiling salted water until al dente, reserving ½ cup of pasta water before draining.
  3. Sauté the chicken in olive oil over medium-high heat for 4-5 minutes on each side until browned and cooked through.
  4. Create the creamy sauce by sautéing garlic, adding heavy cream, and stirring in Parmesan cheese until melted.
  5. Combine the sliced chicken and drained linguine in the skillet with the sauce, adding spinach until wilted.
  6. Serve warm, garnishing with freshly chopped parsley.

Notes
