A flavorful blend of Cajun spices, tender chicken, and creamy orzo that makes for a comforting weeknight dinner.
Ingredients
- 1 pound chicken breast, diced
- 1 cup orzo pasta
- 1 tablespoon Cajun seasoning
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat some oil in a large pot over medium heat.
- Add the diced chicken and season with Cajun seasoning. Cook until browned.
- Combine the onion, garlic, and bell pepper in the pot. Sauté until softened.
- Stir in the orzo and chicken broth, bringing the mixture to a simmer.
- Cover and cook for about 10 minutes, allowing the orzo to become al dente.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 2-3 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For a thicker consistency, allow the dish to simmer a little longer after adding the cream. Adjust seasoning to taste throughout cooking.
