  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp (30 ml) chopped sun-dried tomatoes
  • 1 tbsp (15 ml) tomato paste (tomato purée)
  • 1 cup (200 g) orzo pasta
  • 1 cup (240 ml) chicken broth or stock made with a stock cube
  • 1 cup (30 g) shredded spinach
  • 1/4 cup (60 ml) heavy cream (double cream)
  • 3 tbsp (45 ml) grated parmesan cheese, plus extra to serve


Instructions

  1. Mix the chicken pieces with Cajun spices and salt. In a large skillet, heat the olive oil and vegetable oil, then cook the chicken until it begins to brown.
  2. Add the diced onion, minced garlic, sun-dried tomatoes, and tomato paste to the pan, stirring everything together. Cook on low heat for about five minutes, making sure to stir often.
  3. Incorporate the orzo into the mixture and cook for a short while before pouring in the chicken broth. Let it simmer, cover the skillet, and continue cooking for approximately 20 minutes. Stir frequently and add a bit of water if the pan becomes too dry, as the orzo will absorb the liquid quickly.
  4. Remove the lid and check if the orzo is nearly cooked, with a slight firmness remaining. Mix in the shredded spinach until it wilts.
  5. Pour in the heavy cream and sprinkle the grated Parmesan cheese. Stir everything to create a rich, creamy sauce. Taste for seasoning adjustments and serve with additional Parmesan cheese if desired.
