Ingredients
- 2 boneless, skinless chicken breasts

- 1 cup quinoa (185 g)
- 2 cups chicken broth (475 ml)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup corn kernels (150 g)
- 1 cup kidney beans, drained and rinsed (170 g)
- 1 avocado, diced
- 1 lime, juiced
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rub the chicken breasts with olive oil and Cajun seasoning.
- Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
- While the chicken is baking, rinse the quinoa under cold water.
- In a medium saucepan, combine quinoa and chicken broth.
- Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked.
- Fluff the quinoa with a fork and set aside.
- In a large bowl, combine the diced red and yellow bell peppers.
- Add the corn kernels and black beans to the bowl.
- Once the chicken is cooked, let it rest for 5 minutes, then slice it.
- Add the cooked quinoa to the bowl with the vegetables.
- Add the sliced chicken to the bowl.
- Drizzle lime juice over the mixture.
- Season with salt and pepper to taste.
- Gently toss everything together to combine.
- Top with diced avocado before serving.
