Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (15 ml)
  • 1 tablespoon Cajun seasoning (15 g)
  • 1 cup quinoa (185 g)
  • 2 cups chicken broth (475 ml)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup corn kernels (150 g)
  • 1 cup kidney beans, drained and rinsed (170 g)
  • 1 avocado, diced
  • 1 lime, juiced
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rub the chicken breasts with olive oil and Cajun seasoning.
  3. Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  4. While the chicken is baking, rinse the quinoa under cold water.
  5. In a medium saucepan, combine quinoa and chicken broth.
  6. Bring to a boil over medium-high heat.
  7. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked.
  8. Fluff the quinoa with a fork and set aside.
  9. In a large bowl, combine the diced red and yellow bell peppers.
  10. Add the corn kernels and black beans to the bowl.
  11. Once the chicken is cooked, let it rest for 5 minutes, then slice it.
  12. Add the cooked quinoa to the bowl with the vegetables.
  13. Add the sliced chicken to the bowl.
  14. Drizzle lime juice over the mixture.
  15. Season with salt and pepper to taste.
  16. Gently toss everything together to combine.
  17. Top with diced avocado before serving.
