Ingredients
- 2 Tbsp vegetable oil (30 ml)
- 2 Tbsp all-purpose flour (15 g)
- 710 ml chicken broth (3 cups)
- 240 ml half-and-half (1 cup)
- 710 ml cooked chopped chicken (3 cups)
- 454 g beef or chicken sausage, sliced and browned (1 lb)
- 2 (15-oz) cans red beans, rinsed and drained
- 1 (11-oz) can white corn, drained
- 2 (4-oz) cans chopped green chilies, undrained
- 2 Tbsp (30 ml) dried minced onion flakes
- 1/4 tsp (1 ml) garlic powder
- 10 g cumin (2 tsp)
- 5 g chili powder (1 tsp)
- 22 g cajun seasoning (1 1/2 Tbsp)
- 475 g shredded pepper jack cheese (2 cups)
Instructions
- In a Dutch oven, heat up the vegetable oil and blend in the all-purpose flour. Let it cook for 2 minutes.
- Slowly incorporate the chicken broth and half-and-half by whisking them in. Allow the mixture to reach a boil and continue cooking for 2 minutes, until it thickens.
- Introduce the rest of the ingredients, and let it simmer for another 10 to 15 minutes, making sure to stir every now and then.
Notes
- For a lighter option, use low-fat half-and-half or whole milk.
- Add heat with spicy sausage or a dash of cayenne pepper.
