Ingredients
- 2 cups cucumber, sliced
- 1 cup imitation crab meat, shredded
- 1 avocado, diced

- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds

Instructions
- In a large bowl, combine the sliced cucumber, imitation crab meat, diced avocado, and julienned carrots.
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, salt, and pepper.
- Pour the dressing over the cucumber mixture and toss gently to combine.
