Ingredients

  • 1 pound (454 g) (450 grams) flank steak
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) smoked paprika
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1/2 teaspoon (3 ml) (2.5 grams) chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoon (30 ml) s (30 milliliters) olive oil
  • 1/4 cup (60 ml) (60 milliliters) lime juice
  • 1 cup (240 ml) (150 grams) fresh pineapple, diced
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium onion, sliced
  • 8 small flour tortillas
  • 1/4 cup (60 ml) (15 grams) fresh cilantro, chopped


Instructions

  1. Lay the flank steak flat on a cutting board.
  2. In a small bowl, mix ground cumin, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of the steak.
  4. Drizzle 1 tablespoon (15 milliliters) of olive oil and lime juice over the steak.
  5. Massage the marinade into the steak and let it sit for at least 30 minutes.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Grill the steak for about 4-5 minutes on each side until medium-rare.
  8. Remove the steak from the grill and let it rest for 5 minutes.
  9. In a large skillet, heat the remaining 1 tablespoon (15 milliliters) of olive oil over medium heat.
  10. Add the sliced red bell pepper, green bell pepper, onion, and diced pineapple to the skillet.
  11. Sauté the vegetables and pineapple for about 5-7 minutes until tender.
  12. Slice the rested steak into thin strips against the grain.
  13. Lay one flour tortilla flat, and place a few strips of steak in the center.
  14. Add a portion of the sautéed vegetables and pineapple on top of the steak.
  15. Sprinkle fresh cilantro over the filling.
  16. Roll up the tortilla tightly around the filling.
  17. Repeat with the remaining tortillas and filling.
  18. Serve the roll-ups immediately.
