Ingredients
- 1 pound (454 g) (450 grams) flank steak
- 1 teaspoon (5 ml) (5 grams) ground cumin
- 1 teaspoon (5 ml) (5 grams) smoked paprika
- 1 teaspoon (5 ml) (5 grams) garlic powder
- 1 teaspoon (5 ml) (5 grams) onion powder
- 1/2 teaspoon (3 ml) (2.5 grams) chili powder
- Salt, to taste
- Black pepper, to taste
- 2 tablespoon (30 ml) s (30 milliliters) olive oil
- 1/4 cup (60 ml) (60 milliliters) lime juice
- 1 cup (240 ml) (150 grams) fresh pineapple, diced
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 8 small flour tortillas
- 1/4 cup (60 ml) (15 grams) fresh cilantro, chopped
Instructions
- Lay the flank steak flat on a cutting board.
- In a small bowl, mix ground cumin, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper.
- Rub the spice mixture evenly over both sides of the steak.
- Drizzle 1 tablespoon (15 milliliters) of olive oil and lime juice over the steak.
- Massage the marinade into the steak and let it sit for at least 30 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Grill the steak for about 4-5 minutes on each side until medium-rare.
- Remove the steak from the grill and let it rest for 5 minutes.
- In a large skillet, heat the remaining 1 tablespoon (15 milliliters) of olive oil over medium heat.
- Add the sliced red bell pepper, green bell pepper, onion, and diced pineapple to the skillet.
- Sauté the vegetables and pineapple for about 5-7 minutes until tender.
- Slice the rested steak into thin strips against the grain.
- Lay one flour tortilla flat, and place a few strips of steak in the center.
- Add a portion of the sautéed vegetables and pineapple on top of the steak.
- Sprinkle fresh cilantro over the filling.
- Roll up the tortilla tightly around the filling.
- Repeat with the remaining tortillas and filling.
- Serve the roll-ups immediately.
