Ingredients

  • 1 pound (450 g) chicken breast, diced
  • 2 tablespoons (30 ml) olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) ground coriander
  • 1 teaspoon (5 g) chili powder
  • 1/2 teaspoon (2.5 g) cayenne pepper
  • 4 cups (950 ml) chicken broth
  • 2 cans (15 ounces each, 425 g) white beans, drained and rinsed
  • 1 can (4 ounces, 115 g) diced green chilies
  • 1 cup (240 ml) coconut cream
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (15 g) fresh cilantro, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken breast to the pot.
  3. Cook chicken until browned, about 5-7 minutes.
  4. Remove chicken from the pot and set aside.
  5. In the same pot, add chopped onion.
  6. Sauté onion until soft, about 3-4 minutes.
  7. Add minced garlic to the pot.
  8. Cook garlic for 1 minute until fragrant.
  9. Stir in ground cumin, ground coriander, chili powder, and cayenne pepper.
  10. Cook spices for 1 minute to release flavors.
  11. Pour chicken broth into the pot and stir well.
  12. Add white beans and diced green chilies to the broth.
  13. Return cooked chicken to the pot.
  14. Bring the mixture to a simmer over medium heat.
  15. Reduce heat to low and simmer for 20 minutes.
  16. Stir in heavy cream and mix well.
  17. Season with salt and black pepper to taste.
  18. Simmer for an additional 5 minutes.
  19. Remove from heat and stir in chopped cilantro.
  20. Serve hot and enjoy.
