Ingredients
- 1 pound (450 g) chicken breast, diced
- 2 tablespoons (30 ml) olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) ground coriander
- 1 teaspoon (5 g) chili powder
- 1/2 teaspoon (2.5 g) cayenne pepper
- 4 cups (950 ml) chicken broth
- 2 cans (15 ounces each, 425 g) white beans, drained and rinsed
- 1 can (4 ounces, 115 g) diced green chilies
- 1 cup (240 ml) coconut cream
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (15 g) fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken breast to the pot.
- Cook chicken until browned, about 5-7 minutes.
- Remove chicken from the pot and set aside.
- In the same pot, add chopped onion.
- Sauté onion until soft, about 3-4 minutes.
- Add minced garlic to the pot.
- Cook garlic for 1 minute until fragrant.
- Stir in ground cumin, ground coriander, chili powder, and cayenne pepper.
- Cook spices for 1 minute to release flavors.
- Pour chicken broth into the pot and stir well.
- Add white beans and diced green chilies to the broth.
- Return cooked chicken to the pot.
- Bring the mixture to a simmer over medium heat.
- Reduce heat to low and simmer for 20 minutes.
- Stir in heavy cream and mix well.
- Season with salt and black pepper to taste.
- Simmer for an additional 5 minutes.
- Remove from heat and stir in chopped cilantro.
- Serve hot and enjoy.
