Ingredients

  • 1/2 teaspoon black pepper (1 g)
  • 1/2 teaspoon paprika (1 g)
  • 1 teaspoon garlic powder (2 g)
  • 1 teaspoon onion powder (2 g)
  • 2 large boneless, skinless chicken breasts
  • 1 cup buttermilk (240 ml)
  • 1 large egg
  • Oil for frying (vegetable or canola)
  • 12 mini yeast rolls or slider buns
  • 1/4 cup honey (60 ml)
  • 2 tablespoons unsalted butter (28 g)


Instructions

  1. Cut chicken breasts into small, bite-sized pieces.
  2. In a bowl, mix buttermilk and egg until combined.
  3. Add chicken pieces to the buttermilk mixture and let them marinate for at least 30 minutes.
  4. In a separate bowl, combine flour, powdered sugar, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
  5. Heat oil in a deep pan or fryer to 350°F (175°C).
  6. Remove chicken from the buttermilk mixture, shaking off excess liquid.
  7. Dredge chicken pieces in the flour mixture, ensuring they are fully coated.
  8. Carefully place chicken pieces in the hot oil, frying in batches to avoid overcrowding.
  9. Fry chicken until golden brown and cooked through, about 5-6 minutes per batch.
  10. Remove fried chicken and drain on a paper towel-lined plate.
  11. Preheat oven to 350°F (175°C).
  12. Melt butter and mix with honey in a small bowl.
  13. Place mini yeast rolls on a baking sheet.
  14. Brush tops of rolls with the honey-butter mixture.
  15. Warm rolls in the oven for about 5 minutes.
  16. Slice rolls in half and place a piece of fried chicken inside each roll.
