- 2 large boneless, skinless chicken breasts
- 1 cup buttermilk (240 ml)
- 1 large egg

- 12 mini yeast rolls or slider buns
- 1/4 cup honey (60 ml)
- 2 tablespoons unsalted butter (28 g)
Instructions
- Cut chicken breasts into small, bite-sized pieces.
- In a bowl, mix buttermilk and egg until combined.
- Add chicken pieces to the buttermilk mixture and let them marinate for at least 30 minutes.
- In a separate bowl, combine flour, powdered sugar, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Remove chicken from the buttermilk mixture, shaking off excess liquid.
- Dredge chicken pieces in the flour mixture, ensuring they are fully coated.
- Carefully place chicken pieces in the hot oil, frying in batches to avoid overcrowding.
- Fry chicken until golden brown and cooked through, about 5-6 minutes per batch.
- Remove fried chicken and drain on a paper towel-lined plate.
- Preheat oven to 350°F (175°C).
- Melt butter and mix with honey in a small bowl.
- Place mini yeast rolls on a baking sheet.
- Brush tops of rolls with the honey-butter mixture.
- Warm rolls in the oven for about 5 minutes.
- Slice rolls in half and place a piece of fried chicken inside each roll.
