Description

A delightful dish featuring rolled tortillas filled with shredded chicken, cheese, and spices, baked to perfection.


Ingredients

  • 5 burrito-size flour tortillas
  • 2 ½ cups shredded chicken
  • ½ packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green chilies
  • 10 ounces diced tomatoes with green chilies (undrained)
  • 1 pound cubed Queso Blanco Velveeta


Instructions

  1. In a large mixing bowl, combine the shredded chicken, taco seasoning, sour cream, cheddar cheese, and chopped green chilies. Mix well until fully incorporated.
  2. In a medium saucepan, over medium-high heat, melt the cubed Velveeta with the undrained diced tomatoes. Stir until smooth and blended.
  3. Lay the tortillas flat and spoon about ½ to ¾ cup of the chicken mixture onto each. Roll the tortillas tightly, sealing in all the delicious flavors.
  4. Place the filled tortillas side by side in a prepared casserole dish. Pour the warm queso over the top.
  5. Bake in the preheated oven at 350°F for 20–25 minutes until the enchiladas bubble and everything is heated through.

Notes

For added flavor, consider customizing with sautéed vegetables or additional taco sauce.
