Description

A quick and satisfying one-pan meal that combines tender chicken breasts with colorful bell peppers and melty cheese, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts, diced
  • 2 bell peppers, sliced (any colors you prefer)
  • 1 cup shredded cheese (cheddar or a cheese blend)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cooked rice or tortillas for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced bell peppers, garlic powder, cumin, salt, and pepper to the skillet. Stir and cook until the peppers are tender, about 3-5 minutes.
  4. Reduce the heat to low and sprinkle the shredded cheese over the chicken and bell pepper mixture. Cover the skillet and let it sit for a few minutes until the cheese is melted.
  5. Serve hot with cooked rice or tortillas.

Notes

Let the chicken rest before cutting to retain juices. For extra heat, consider adding diced jalapeños or chili powder.
