Ingredients
- 2 chicken breasts, diced
- 2 bell peppers, sliced (any colors you prefer)
- 1 cup shredded cheese (cheddar or a cheese blend)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Cooked rice or tortillas for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced bell peppers, garlic powder, cumin, salt, and pepper to the skillet. Stir and cook until the peppers are tender, about 3-5 minutes.
- Reduce the heat to low and sprinkle the shredded cheese over the chicken and bell pepper mixture. Cover the skillet and let it sit for a few minutes until the cheese is melted.
- Serve hot with cooked rice or tortillas.
