Description

A vibrant and easy dish featuring juicy chicken breasts, colorful bell peppers, and melted cheese, perfect for busy weeknights.

Ingredients

  • 4 boneless (skinless chicken breasts)
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season the chicken by placing the breasts in the dish. Drizzle with 1 tbsp olive oil, then sprinkle with Italian seasoning, garlic powder, paprika, salt, and black pepper. Rub the seasoning evenly on both sides.
  3. Prepare the vegetables by tossing the sliced peppers and onions (if using) with the remaining 1 tbsp olive oil. Arrange them around and over the seasoned chicken breasts.
  4. Bake the chicken uncovered in the preheated oven for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  5. Add cheese by sprinkling the mozzarella and Parmesan over the chicken and peppers. Return to the oven for an additional 3–5 minutes, or until the cheese melts and becomes bubbly.
  6. Serve hot and garnish with fresh parsley. Enjoy your cheesy baked chicken with rice, pasta, or a crisp side salad.

Notes

For deeper flavor, consider marinating the chicken breasts for a couple of hours before preparing.
