Description
A vibrant and easy dish featuring juicy chicken breasts, colorful bell peppers, and melted cheese, perfect for busy weeknights.
Ingredients
- 4 boneless (skinless chicken breasts)
- 2 bell peppers (any color, thinly sliced)
- 1 small onion (thinly sliced, optional)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
- 1/4 cup grated Parmesan cheese
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Season the chicken by placing the breasts in the dish. Drizzle with 1 tbsp olive oil, then sprinkle with Italian seasoning, garlic powder, paprika, salt, and black pepper. Rub the seasoning evenly on both sides.
- Prepare the vegetables by tossing the sliced peppers and onions (if using) with the remaining 1 tbsp olive oil. Arrange them around and over the seasoned chicken breasts.
- Bake the chicken uncovered in the preheated oven for 20–25 minutes until the internal temperature reaches 165°F (74°C).
- Add cheese by sprinkling the mozzarella and Parmesan over the chicken and peppers. Return to the oven for an additional 3–5 minutes, or until the cheese melts and becomes bubbly.
- Serve hot and garnish with fresh parsley. Enjoy your cheesy baked chicken with rice, pasta, or a crisp side salad.
Notes
For deeper flavor, consider marinating the chicken breasts for a couple of hours before preparing.
