Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper


Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with garlic powder, onion powder, black pepper, and salt.
  3. Place the seasoned chicken in a single layer in the baking dish.
  4. Evenly distribute the uncooked rice over the chicken.
  5. In a bowl, mix the chicken broth, cheddar cheese, and sour cream until well combined. Pour this mixture over the rice and chicken.
