Ingredients
- 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
- Season the chicken breasts with garlic powder, onion powder, black pepper, and salt, ensuring they’re coated evenly.
- Lay the seasoned chicken in a single layer in the baking dish.
- Evenly distribute the uncooked rice over the seasoned chicken breasts.
- In a bowl, mix the chicken broth, cheddar cheese, and sour cream until well combined.
- Pour the mixture over the rice and chicken.
- Cover the dish tightly with foil and bake for 40-45 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the dish is bubbly and golden brown.
Notes
For extra flavor, marinate the chicken breasts in the seasoning for an hour before baking. You can also experiment with different types of cheese.
