Delicious cheesy chicken enchiladas filled with tender chicken, gooey cheese, and wrapped in soft tortillas, all drenched in a creamy sauce.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 8 flour tortillas
- 2 cups enchilada sauce
- 1 cup sour cream or cream cheese
- 1/2 cup chopped onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and add onions; cook until translucent.
- In a bowl, mix shredded chicken, 1/2 cup shredded cheese, garlic powder, cumin, salt, and pepper.
- Spoon the chicken mixture onto each tortilla, roll them up, and place them in a greased baking dish.
- In a separate bowl, mix the enchilada sauce with sour cream or cream cheese until smooth; pour this sauce over the rolled enchiladas.
- Sprinkle the remaining cheese on top.
- Bake for 20-25 minutes, or until bubbly and golden.
