Description

Delicious cheesy chicken enchiladas filled with tender chicken, gooey cheese, and wrapped in soft tortillas, all drenched in a creamy sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 1 cup sour cream or cream cheese
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and add onions; cook until translucent.
  3. In a bowl, mix shredded chicken, 1/2 cup shredded cheese, garlic powder, cumin, salt, and pepper.
  4. Spoon the chicken mixture onto each tortilla, roll them up, and place them in a greased baking dish.
  5. In a separate bowl, mix the enchilada sauce with sour cream or cream cheese until smooth; pour this sauce over the rolled enchiladas.
  6. Sprinkle the remaining cheese on top.
  7. Bake for 20-25 minutes, or until bubbly and golden.
