Ingredients

  • 1-1/2 cups (355 ml) cooked and shredded beef
  • 2 cups (475 ml) homemade enchilada sauce, divided or store bought
  • 2-1/2 cups (300 g) shredded cheddar or Monterey Jack cheese, divided
  • 1/2 tsp (2.5 ml) table salt
  • 1/4 tsp (1.25 ml) ground black pepper
  • 8 homemade corn tortillas or store bought


Instructions

  1. Set your oven to 350°F to preheat.
  2. In a medium-sized bowl, mix together the beef, 1/4 cup of the enchilada sauce, 1 cup of the cheese, salt, and pepper until well blended.
  3. Spoon the beef mixture onto each tortilla. If using store-bought tortillas, wrap them in a damp paper towel and microwave for 30 seconds on each side to soften.
  4. Tightly roll up the filled tortillas and arrange them seam-side down in a 9 x 13-inch baking dish.
  5. Drizzle the leftover enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  6. Place the dish in the oven and bake for 20-25 minutes until the cheese is fully melted and bubbly.
  7. Serve right away with any toppings you enjoy.
