Description

A comforting and satisfying casserole featuring layers of shredded chicken, cheese, beans, and salsa, perfect for casual nights in with friends and family.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • 6 tortillas, cut into strips
  • 1/2 cup sour cream
  • Green onions, for garnish


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, taco seasoning, and half of the cheese.
  3. In a greased casserole dish, layer tortilla strips, followed by the chicken mixture.
  4. Top with remaining cheese.
  5. Bake for 25-30 minutes until cheese is bubbly and golden.
  6. Let it cool for a few minutes, then serve with sour cream and garnish with green onions.

Notes

For added crunch, consider toasting the tortilla strips before layering. Allow the casserole to rest briefly after baking for easier cutting.
