Ingredients
- 3 cups shredded cooked chicken (720 g)
- 6 ounces (170 g) beef cream cheese, room temperature
- 1 1/2 cups (180 g) grated Monterey Jack or Mexican blend cheese
- 1/4 cup (60 ml) chopped cilantro
- 1/2 cup (120 ml) salsa
- 1/3 cup (80 ml) sour cream
- 1 teaspoon (5 ml) kosher salt
- 1/2 teaspoon (3 ml) cumin
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) ground black pepper
- 24 (6-inch) corn tortillas
- Vegetable oil to fry
Instructions
- In a spacious bowl, combine the chicken, beef cream cheese, shredded cheese, cilantro, salsa, sour cream, salt, cumin, garlic powder, and pepper thoroughly.
- Wrap six tortillas at a time in a moist paper towel and microwave for 15 to 30 seconds until they are heated. Keep them in the towel until you’re ready to fill them, which helps prevent cracking when rolling.
- Pour vegetable oil into a large frying pan to a depth of 1/2-inch and warm it over medium heat until it reaches 350°F.
- Place 2 tablespoons of the chicken mixture in the middle of a tortilla and spread it slightly, ensuring there’s space at the edges. Roll the tortilla tightly and, using metal tongs, place it seam side down into the hot oil. Secure with toothpicks if necessary (*See note). Cook each side until they turn golden brown, about 2 to 3 minutes per side. Drain on paper towels and remove the toothpicks.
- Continue this process until all the tortillas are stuffed, rolled, and fried.
