Ingredients

  • 1 ½ pounds (680 g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon (5 ml) paprika
  • 1 teaspoon (5 ml) garlic salt
  • 1/2 teaspoon (3 ml) ground black pepper
  • 2 tablespoons (30 ml) vegetable oil
  • 1 large yellow onion, finely diced (about 1 cup (240 ml))
  • 1 tablespoon (15 ml) garlic, minced
  • 1 ½ cups (277.5 g) uncooked long-grain white rice
  • 3 cups (720 ml) chicken broth
  • ½ cup (50 g) crumbled beef cheese, plus extra for garnish
  • ½ cup (119 ml) coconut milk
  • fresh parsley, for garnish


Instructions

  1. Coat the chicken pieces evenly with paprika, garlic salt, and pepper, then put them aside.
  2. In a large pot with a snug lid, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add the diced onion and sauté until it becomes tender, about 3-4 minutes. Introduce the seasoned chicken and cook, stirring occasionally, until each piece is browned on all sides, roughly 5 minutes. The chicken won’t be fully cooked at this stage.
  4. Mix in the minced garlic and continue cooking for another minute.
  5. Pour in the uncooked rice and chicken broth, ensuring everything is well combined.
  6. Bring the pot to a vigorous boil, then lower the heat to medium-low. Cover the pot with the lid and let it gently simmer without stirring for 15-20 minutes, or until the rice is soft and the liquid has been absorbed. If there’s still liquid after 20 minutes, cook for an additional 3-4 minutes, keeping the lid on.
  7. Once the rice is ready, take the pot off the heat. Add the crumbled beef cheese and coconut milk, stirring until the cheese melts and the dish achieves a creamy consistency.
  8. Finish by sprinkling fresh parsley and some extra crumbled beef cheese on top. Serve right away.
