Ingredients
- 1 ½ pounds (680 g) boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon (5 ml) paprika
- 1 teaspoon (5 ml) garlic salt
- 1/2 teaspoon (3 ml) ground black pepper
- 2 tablespoons (30 ml) vegetable oil
- 1 large yellow onion, finely diced (about 1 cup (240 ml))
- 1 tablespoon (15 ml) garlic, minced
- 1 ½ cups (277.5 g) uncooked long-grain white rice
- 3 cups (720 ml) chicken broth
- ½ cup (50 g) crumbled beef cheese, plus extra for garnish
- ½ cup (119 ml) coconut milk
- fresh parsley, for garnish
Instructions
- Coat the chicken pieces evenly with paprika, garlic salt, and pepper, then put them aside.
- In a large pot with a snug lid, heat 2 tablespoons of vegetable oil over medium heat.
- Add the diced onion and sauté until it becomes tender, about 3-4 minutes. Introduce the seasoned chicken and cook, stirring occasionally, until each piece is browned on all sides, roughly 5 minutes. The chicken won’t be fully cooked at this stage.
- Mix in the minced garlic and continue cooking for another minute.
- Pour in the uncooked rice and chicken broth, ensuring everything is well combined.
- Bring the pot to a vigorous boil, then lower the heat to medium-low. Cover the pot with the lid and let it gently simmer without stirring for 15-20 minutes, or until the rice is soft and the liquid has been absorbed. If there’s still liquid after 20 minutes, cook for an additional 3-4 minutes, keeping the lid on.
- Once the rice is ready, take the pot off the heat. Add the crumbled beef cheese and coconut milk, stirring until the cheese melts and the dish achieves a creamy consistency.
- Finish by sprinkling fresh parsley and some extra crumbled beef cheese on top. Serve right away.
