Ingredients

  • – 2 pounds (907 g) chicken breast, cut into thin cutlets
  • – 1/3 cup (80 ml) Italian style bread crumbs
  • – 1/4 cup (25 g) grated Parmesan cheese
  • – 1 teaspoon (5 ml) garlic powder
  • – 1/2 teaspoon (3 ml) salt
  • – 2 tablespoons (30 ml) vegetable oil, plus more as needed
  • – 16 ounces (454 g) penne pasta, uncooked
  • – 6 tablespoons (85 g) butter
  • – 4 cloves garlic, pressed
  • – 2 tablespoons (15 g) flour
  • – 2 cups (480 ml) heavy cream
  • – 1 cup (240 ml) chicken broth
  • – 1/4 cup (25 g) grated Parmesan
  • – 1 teaspoon (5 ml) salt
  • – 1/2 teaspoon (3 ml) pepper
  • – chopped parsley


Instructions

  1. Follow the package instructions to prepare the pasta.
  2. Slice or flatten the chicken breasts into thin pieces. Combine the bread crumbs, Parmesan cheese, garlic powder, and salt. Thoroughly coat both sides of each chicken piece with this mixture.
  3. Warm a large cast iron or heavy-bottomed pan with 2 tablespoons of oil over medium heat. When the oil is hot, place the chicken in the pan and cook undisturbed for 4-5 minutes. Turn the chicken over and cook for another 4-5 minutes, or until the internal temperature reaches 165ËšF. Remove the chicken and set it aside. Cook the chicken in several batches to avoid overcrowding the pan, adding more oil if necessary to prevent drying out.
  4. After taking out the chicken, add butter to the pan and stir until it melts. Incorporate the garlic and sauté for about 30 seconds, then blend in the flour thoroughly.
  5. Gradually add the chicken broth while stirring until smooth, bringing the mixture to a gentle boil. Allow it to cook until the sauce begins to thicken, around 1 to 1.5 minutes. Sprinkle in the remaining salt and pepper, then slowly pour in the heavy cream, returning the mixture to a gentle boil. Mix in the Parmesan cheese and let it simmer for 3-5 minutes, then combine with the pasta that has been cooked and drained.
  6. Present the chicken whole or sliced over the pasta, and optionally decorate with parsley. Enjoy your meal!
