Description

Ingredients

  • 2 1/2 cup (600 ml) s shredded chicken
  • 1/2 tsp (3 ml). kosher salt
  • 1/2 tsp (3 ml). garlic powder
  • 1/2 tsp (3 ml). ground cumin
  • 1/2 tsp (3 ml). chili powder
  • 3/4 cup (180 ml) red enchilada sauce
  • 2 cup (480 ml) s shredded Mexican cheese
  • 18-20 yellow corn tortillas
  • 4 Tbsp (60 ml). olive oil (for brushing tortillas)
  • 1 avocado, pitted and peeled
  • 1/4 cup (60 ml) sour cream or greek yogurt
  • 1 lime, juiced (about 2 Tbsp (30 ml).)
  • 1/4 cup (60 ml) cilantro, chopped
  • 1/2 tsp (3 ml). salt
  • 2 Tbsp (30 ml). water


Instructions

  1. Set your oven to 425°F and prepare a large baking tray with parchment paper.
  2. In a sizable bowl, combine the shredded chicken with the kosher salt, garlic powder, ground cumin, chili powder, and red enchilada sauce. Mix thoroughly and put aside.
  3. Cover the tortillas with a damp paper towel and microwave them for 30 seconds until they become soft and flexible.
  4. Place the tortillas on the prepared baking tray and coat both sides liberally with olive oil.
  5. To put together the taquitos, sprinkle some cheese in the center of each tortilla, add a portion of the chicken mixture, and then sprinkle a bit more cheese on top.
  6. Roll each tortilla snugly without over-tightening. After rolling, apply more olive oil to the taquitos and bake them for 18-20 minutes at 425°F until they become golden and crispy.
  7. Present the taquitos warm with a topping of Avocado Lime Crema, pickled onions, and freshly chopped cilantro. Relish the flavors!
