Ingredients
- 3-4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 8 oz penne pasta
- 1 packet (1 oz) ranch dressing mix
- 1 cup shredded sharp cheddar cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced chicken breasts, seasoning with salt, pepper, and garlic powder. Cook until golden brown and fully cooked, about 6-8 minutes.
- Add broccoli florets and cooked penne pasta to the skillet; stir gently to blend. Sprinkle ranch dressing mix over the mixture and add a splash of water or low-sodium chicken broth if needed.
- Gradually stir in shredded cheddar cheese until melted and creamy. Simmer for an additional 5 minutes, stirring occasionally.
- Serve hot from the skillet, garnished with more cheese or crushed crackers if desired.
