Ingredients
- 3 large chicken breasts, boneless, skinless (800-900 g)
- 3/4 tsp salt (3.75 ml)
- 1/2 tsp black pepper (2.5 ml)
- 1/2 tsp garlic powder (2.5 ml)
- 1/2 tsp paprika (2.5 ml)
- 1 1/2 Tbsp olive oil (22.5 ml)
- 4 oz cream cheese, cold (113 g)
- 1 Tbsp mayonnaise (15 ml)
- 2 garlic cloves, pressed
- 1/4 tsp salt (1.25 ml)
- 1 1/2 cups baby spinach leaves, chopped (45 g)
- 1/4 cup shredded beef cheese (30 g)
- 1/4 cup shredded parmesan cheese (30 g)
Instructions
- Set your oven to 425°F and position a rack in the middle. In a bowl, blend the cream cheese, mayonnaise, and minced garlic using a fork. Then, incorporate the beef and parmesan cheeses along with the chopped spinach until the mixture is uniform.
- Place the chicken breasts on a cutting board and carefully slice into each one about 3/4 of the way without going completely through. Fill each chicken breast with one-third of the prepared mixture and secure it with a toothpick, ensuring it can lie flat for cooking.
- Coat the chicken breasts with 3/4 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika, or adjust the seasoning to your preference.
- Warm up 1 1/2 tablespoons of olive oil in a pan that can go in the oven, like a cast iron or a heavy skillet, over medium heat. Cook the chicken for 4 minutes on each side until it turns golden brown.
- Flip the chicken once more and promptly move the skillet to the oven. Let it bake at 425°F for 10-15 minutes until a thermometer in the thickest part reads 165°F. Allow the chicken to rest for 5 minutes before cutting. Drizzle the juices from the pan over the chicken when serving.
