Ingredients

  • 1/2 cup (120 ml) onion
  • 2 1/2 cup (600 ml) s cubed potatoes
  • 1 lb (454 g). ground beef
  • 1 packet Low Sodium Taco Seasoning
  • 1 10 oz (283 g). Diced tomatoes with green chiles
  • 1 cup (240 ml) shredded cheese


Instructions

  1. Begin by warming up your cast iron skillet or sauté pan with olive oil on medium heat.
  2. Introduce the onion and potatoes to the pan.
  3. Cook them for a few minutes until the onions become soft and aromatic.
  4. Add the ground beef and cook until it turns brown, removing excess fat if needed.
  5. Incorporate the taco seasoning packet along with the diced tomatoes and their juices.
  6. Mix well, cover the pan, and let it cook for around 10 minutes until the potatoes are tender when pierced with a fork.
  7. Sprinkle with shredded cheese, allow it to melt slightly, and serve while hot.
