Ingredients
- 1 tbsp (15 ml). olive oil
- 1/2 cup (120 ml) onion
- 2 1/2 cup (600 ml) s cubed potatoes
- 1 lb (454 g). ground beef
- 1 packet Low Sodium Taco Seasoning
- 1 10 oz (283 g). Diced tomatoes with green chiles
- 1 cup (240 ml) shredded cheese
Instructions
- Begin by warming up your cast iron skillet or sauté pan with olive oil on medium heat.
- Introduce the onion and potatoes to the pan.
- Cook them for a few minutes until the onions become soft and aromatic.
- Add the ground beef and cook until it turns brown, removing excess fat if needed.
- Incorporate the taco seasoning packet along with the diced tomatoes and their juices.
- Mix well, cover the pan, and let it cook for around 10 minutes until the potatoes are tender when pierced with a fork.
- Sprinkle with shredded cheese, allow it to melt slightly, and serve while hot.
