Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup apple cider vinegar (240 ml)
  • 1 cup almond milk (240 ml)
  • 1 large egg

  • 1 teaspoon salt (5 g)
  • 1 teaspoon black pepper (2 g)
  • 1/2 teaspoon paprika (1 g)
  • 1/2 teaspoon onion powder (1 g)
  • 1/4 teaspoon chili powder (0.5 g)
  • Vegetable oil for frying
  • 12 small dinner rolls or mini buns
  • 2 tablespoons olive oil (28 g)


Instructions

  1. Cut the chicken breasts into 1-inch pieces.
  2. Place chicken pieces in a bowl and pour pickle juice over them.
  3. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
  4. In a separate bowl, whisk together milk and egg.
  5. In another bowl, combine flour, powdered sugar, salt, black pepper, paprika, garlic powder, and cayenne pepper.
  6. Remove chicken from the pickle juice and pat dry with paper towels.
  7. Dip each chicken piece into the milk and egg mixture.
  8. Dredge the chicken pieces in the flour mixture, coating evenly.
  9. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
