- 1 cup dill pickle juice (240 ml)
- 1 cup all-purpose flour (120 g)
- 2 tablespoons powdered sugar (25 g)
- 1 teaspoon salt (5 g)
- 1 teaspoon black pepper (2 g)
- 1/2 teaspoon paprika (1 g)
- 1/2 teaspoon garlic powder (1 g)
- 1/2 cup milk (120 ml)
- 1 large egg
- 1/4 cup vegetable oil (57 g)
- 12 small dinner rolls or mini buns
Instructions
- Cut the chicken breasts into 1-inch cubes.
- Marinate the chicken cubes in pickle juice for 30 minutes.
- In a shallow bowl, mix flour, powdered sugar, salt, black pepper, paprika, and garlic powder.
- In another bowl, whisk together milk and egg until combined.
- Remove chicken from pickle juice and pat dry with paper towels.
- Dip each chicken piece in the milk and egg mixture.
- Coat chicken pieces in the flour mixture, ensuring even coverage.
- Heat oil in a skillet over medium-high heat.
- Fry chicken pieces in batches until golden brown and cooked through, about 3-4 minutes per side.
- Remove chicken from skillet and drain on paper towels.
- Preheat oven to 350°F (175°C).
- Place dinner rolls on a baking sheet.
- Melt butter in a small saucepan.
- Brush melted butter over the tops of the dinner rolls.
- Bake rolls in the oven for 5-7 minutes until warmed through.
- Slice each roll in half and place a fried chicken piece inside.
- Serve immediately.
