Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (240 ml)
  • 1 cup all-purpose flour (120 g)
  • 2 tablespoons powdered sugar (25 g)
  • 1 teaspoon salt (5 g)
  • 1 teaspoon black pepper (2 g)
  • 1/2 teaspoon paprika (1 g)
  • 1/2 teaspoon garlic powder (1 g)
  • 1/2 cup milk (120 ml)
  • 1 large egg
  • 1/4 cup vegetable oil (57 g)
  • 12 small dinner rolls or mini buns


Instructions

  1. Cut the chicken breasts into 1-inch cubes.
  2. Marinate the chicken cubes in pickle juice for 30 minutes.
  3. In a shallow bowl, mix flour, powdered sugar, salt, black pepper, paprika, and garlic powder.
  4. In another bowl, whisk together milk and egg until combined.
  5. Remove chicken from pickle juice and pat dry with paper towels.
  6. Dip each chicken piece in the milk and egg mixture.
  7. Coat chicken pieces in the flour mixture, ensuring even coverage.
  8. Heat oil in a skillet over medium-high heat.
  9. Fry chicken pieces in batches until golden brown and cooked through, about 3-4 minutes per side.
  10. Remove chicken from skillet and drain on paper towels.
  11. Preheat oven to 350°F (175°C).
  12. Place dinner rolls on a baking sheet.
  13. Melt butter in a small saucepan.
  14. Brush melted butter over the tops of the dinner rolls.
