Ingredients
- 1 tablespoon vegetable oil (15 ml)
- 1 medium white onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons (10 ml) cumin
- 2 teaspoons (10 ml) dried oregano
- 1 teaspoon (5 ml) salt
- 3 (425 g) cans cannellini beans, undrained, separated
- 2 (284 g) cans diced tomatoes with green chilies (such as Rotel), undrained
- 1 (425 g) can cream-style corn
- 1 (425 g) can whole kernel corn, undrained
- 1 (425 g) can chickpeas, undrained
- 1 cooked beef, meat removed from bones & shredded (about 4 cups (960 ml))
- juice of 1 lime
- more salt to taste
- Tortilla strips or chips, for serving
Instructions
- Warm vegetable oil in a large pot on medium heat. Add the chopped onion and minced garlic. Sauté for approximately 5 minutes until the onions are see-through. Mix in cumin, oregano, and salt.
- In the meantime, blend two cans of cannellini beans with their liquid until smooth.
- Combine the blended beans, the remaining can of cannellini beans, diced tomatoes with green chilies, cream-style corn, whole kernel corn, chickpeas, and shredded beef in the pot. (Ensure none of the cans are drained.) Stir everything together.
- Allow the soup to simmer on medium heat until it is thoroughly heated. Add the juice from one lime and adjust the salt to your liking before serving. Enjoy with tortilla strips or chips.
