- – 680 g chicken tenders or 3 chicken breasts (24 oz)
- – 454 g Parker House yeast rolls in the round foil container (16 oz)
- – 240 ml buttermilk (1 cup)
- – 240 ml dill pickle juice (1 cup)
- – 10 g sugar (2 tsp)
- – 5 g salt (1 tsp)
- – 1.25 g garlic powder (1/4 tsp)
- – 1.25 g onion powder (1/4 tsp)
- – 240 ml milk (1 cup)
- – 1 egg
- – 120 g all-purpose flour (1 cup)
- – 30 g powdered sugar (1/4 cup)
- – 10 g paprika (2 tbsp)
- – 5 g garlic powder (1 tsp)
- – 5 g salt (1 tsp)
- – 5 g black pepper (1 tsp)
- – 45 g melted butter (3 tbsp)
- – 30 g honey (2 tbsp)
Instructions
- Cut the raw chicken tenders and breasts into small, bite-sized pieces. In a bowl, mix together the pickle juice, buttermilk, sugar, salt, garlic powder, and onion powder. Immerse the chicken chunks in this mixture, cover the bowl, and refrigerate for a minimum of 4 hours, preferably overnight.
- In another bowl, beat the milk and egg together until smooth. In a separate container, combine the flour, powdered sugar, paprika, garlic powder, salt, and black pepper, then mix thoroughly. Remove the chicken from the pickle marinade and dip each piece into the milk and egg blend, ensuring they are completely coated. Then, transfer them directly into the seasoned flour mixture, tossing to cover them evenly.
- Preheat the oven following the directions on the yeast roll packaging. If using Parker House rolls, set the temperature to 300°F and bake for 15 minutes with foil covering the top. Begin baking them when you start frying the chicken.
- Pour peanut oil into a large frying pan and heat it over medium-high heat. Cook the chicken in batches until it turns golden and crispy, flipping once halfway through, for about 3-4 minutes. Place the cooked chicken onto a rack to allow excess oil to drain off.
- Mix together the softened butter and honey until well combined. Brush this mixture over the tops (and optionally inside) of the warm yeast rolls. Place a piece of chicken inside each roll and savor the dish!
